So I’ve written before that my nephew is on the spectrum. As a result, my mom and sister have been working towards incorporating less processed foods and eliminating certain trigger foods from his diet. Today we went on an adventure for local honey. More on that later. On the other end of Florida, my MIL and FIL have been learning more about Paleo and changing the way they eat and think about food. Various health concerns have sounded the alarm and we are all listening!
As a result from all the input on the need to be healthy, we are biting the bullet. Time to take control of our health. Here’s our first step.
I hit up Pinterest – AGAIN! Hard to believe I know. 🙂 I found some great Paleo recipes. Here’s the recap.
Beef Tenderloin Steak with Red Wine Mushroom Sauce: I don’t like to see red in my meat. I may have cooked it a bit too long, but it beats the alternative. So, all in all, great recipe.
Iceberg Wedge Salad: We modified the recipe. Our iceberg wedge included grape tomatoes, cucumbers, strawberries, blue cheese crumbles, and Greek vinaigrette. Thus why our meal wasn’t 100% Paleo. I’m addicted to blue cheese and don’t see it leaving my fridge any time soon.
Roasted Baby Carrots: Yum! Yum! Yum! If you aren’t a fan of how carrots taste, this recipe is for you. We cooked ours for about 35 minutes so they were completely soft.
I’m not one for dieting. I don’t think diets work. It’s small lifestyle changes that add up in the end. So we will keep learning and cooking.
